Easter/St Patrick's Day Rainbow Cookies



My family has had the tradition of making these cookies every Easter for as long as I can remember. You'll want to double the recipe below.

Recipe for cookies:
1 1/2 cup sugar
2 3/4 cups flour
1 tsp baking soda
1/2 tsp baking powder
1 cup butter
1 egg
1 tsp vanilla extract
Mix your flour, baking soda and baking powder in a small bowl and set to the side.

 
 
Mix your softened butter and sugar together with a mixer. Beat in eggs and vanilla

 
 
Slowly add in your flour mixture.
Set your dough in the fridge for an hour.
 
In small bowls seperate your dough and add your food coloring to your desired colors.
 
 
Choose a color and roll it into a ball.
 
 
Choose your following colors and roll into long strands- wrap around the ball.
 
 
Press your colors together to make sure that they don't fall apart.
 

 
Cut in half and place on baking sheet.
 
 
Just make sure you give your cookies plenty of room or else this can happen!
